Ingredientes: para 4 personas

-1,5 litros de agua.
- 1/4 Kg. de almendras dulces.
- 1 cebolla mediana.
- 1 tomate grande.
- 100 gr. de jamón de trevelez vallejo cortado en pequeños dados.
- 2 rebanadas de pan duro.
- 2 dientes de ajo.
- Unas hebras de azafrán.
- 2 cucharadas de aceite.

Elaboración:

Se escaldan las almendras y se pelan. Se fríen las almendras con el pan y los ajos y se tritura. Se quedan apartados. Se hace un sofrito con la cebolla, el tomate y el jamón que añadiremos al final del sofrito. Se echa el agua en una olla hasta que hierva. Cuando esté hirviendo se le agrega el sofrito con el jamón, en triturado de las almendras, el azafrán y se prueba de sal. Si se quiere se le puede añadir trocitos de huevo duro y pan frito a trocitos. Los sofritos se hacen con poco aceite porque las almendras y el jamón dan grasa.
